
In the heat of the summer this is a great way to cool down. Luscious sweet Maine lobster tails butter poached in shell, then chilled, cleaned, & small(ish) rough cut. Mix cleaned meat with mayo, salt, pepper, fresh squeezed lemon juice, fresh lemon zest, & I added a pinch of tarragon to zip the flavor up a notch. Store bought hot dog brioche buns toasted with truffle butter added more amazing richness & light crunch. Finished with a couple of pieces of light & refreshing boston bibb lettuce.
