
One of my favorite summer foods is a chilled chicken salad. So easy & versatile. Whether you choose to grill, smoke, or roast your chicken you can add your choice of favorite veggies (bell peppers & celery are our staples) a hint of sweetness with grapes, craisins, raisins, apples, etc and added texture and crunch with sliced roasted almonds, walnuts, pinenuts, etc. I usually make it mayo based and throw in some fresh herbs for a fresh kick or basil pesto in this version. All of it mixed with your favorite pasta or grain makes it a great 1 bowl meal or snack. Other popular versions are dill, chipotle, orange, or siracha.
